Bonchon has raised its system-wide weighted average distributor fill rate by 1.1% to 99.3% since implementing Sightline OS, according to Sightline OS. The chain operates more than 150 restaurants and works with 35 distributor operating companies. Sightline OS also says Bonchon reduced product substitutions. The company cited the results as it launched Continuity AI on September 15, an engine that identifies supply-gap risks up to 12 weeks ahead and recommends a next action and timing. Continuity AI is available now to existing Sightline OS customers and to prospective customers evaluating the platform.

Earlier Warning for Supply Gaps

Continuity AI activates when an inventory escalation is flagged. It scans for products that are already out of stock or heading toward one based on available supplier lead times, while also looking further ahead in the planning horizon for later gaps.

For each issue, the tool provides a severity label of Critical, High, Medium, or Low; a mitigation outlook of Preventable, Partially Preventable, or Unavoidable; and a recommended action, such as placing or expediting an order. Sightline OS says recommendations are sized to the number of cases needed and include an assessment of whether delivery can arrive in time.

“Restaurant supply chain has always been a hands-on business. I learned that early on as an entrepreneur driving my own food distribution delivery trucks and later leading supply chain teams inside some of the industry's most complex restaurant organizations. Continuity AI is about giving teams the ability to be proactive and preventative by identifying what's coming, understanding what actually requires attention, and taking action before a disruption reaches the restaurant. That means less time analyzing and firefighting, and more time making decisions, building relationships and improving the business.”

What Bonchon Says

Sightline OS says Bonchon’s fill rate rose and product substitutions fell across its distribution network after the chain implemented the platform.

“Sightline OS has transformed how we manage our supply chain. With greater visibility across our distribution network and stronger forecasting capabilities, our team can identify potential inventory challenges earlier, collaborate more effectively with our partners, and improve supply reliability for our franchisees. That translates to fewer disruptions and a better experience for both operators and guests.”

Built for Restaurant Planning Teams

Sightline OS says Continuity AI is built for supply chain and inventory planning leaders at multi-unit restaurant chains. It uses a chain’s proprietary supply network data to distinguish between a stockout that an inbound order will resolve and a longer supply gap with more shortages ahead.

Sightline OS says the purpose is to help teams spend time on disruptions where intervention can still change the outcome, rather than manually bringing together forecasting, inventory, and supplier data after a menu outage has begun.

“Supply chains are becoming volatile and experiencing disruption at ever-increasing rates. Nothing is a more expensive and urgent supply chain problem for a restaurant than when it doesn't have what it needs to serve its guests. The best sourcing and top quality are meaningless if a critical ingredient creates menu outages.”
